The short season of Concord Grapes has us all mixing and matching these grapes with our favorite foods. Gia attempted to hide all the grapes in the Cheese Dept of course and they're finding their way onto all our boards with great fan fare.
The sweetness of Concord grapes has us reaching for saltier more complex cheeses, like our Cave-aged, year-old Gruyere. This week we're pairing this classic beauty with an easy drinking Cabernet Franc from Loire Valley. Cabernet Franc is a complex wine with herbaceous green pepper notes. It's one of the parent varietals of California's popular Cabernet Sauvignon, although its flavor profile is distinctly different from its offspring. Typically, we don't layer complexity with complexity, but this Certified Biodynamic Bourgueil is showcasing the crystalline structure and salinity of the Gruyere so well that we've thrown out the rules.
